Short-term coverage for US citizen permanently returning to US from abroad

I am relocating myself (U.S. citizen), my husband (Green Card), and my 2-year-old son (U.S. citizen) from Germany to the US this month, and my job contract (and health insurance coverage) only begin on January 1, 2024. I am looking to fill a week-long gap between when we arrive in the US and when my employer health insurance plan begins in January.

I'm already in contact with my employer about extending coverage out of pocket to cover the gap; however, I am still waiting to hear back from them, so I am exploring backup options. Unfortunately, the state where we will be residing–New York–doesn't seem to allow for short-term health insurance plans.

We are ineligible (as far as I can tell) for most travel insurance plans which typically cover expats visiting the US since we no longer have permanent residency abroad.

Call us risk-averse, but going without health insurance for any amount of time is non-negotiable for our family, so we'd be grateful for any suggestions you all might have!
