Help Choosing an Insurance Plan at my New Company

Hello, I'm having difficulty choosing a plan. I had a an HSA at my previous company because it's nice being able to save some untaxed income. I was hoping to do the same here but the deductible and out of pocket max seems extremely high. I am pretty active (I ski, rock climb, camp, backpack) so I'm at somewhat of a risk of breaking a bone or getting hurt, but I am young. 29 years old, and only have one issue that I plan on seeing a doctor about in the next month or so. I figured I would save more money on my health care with the EPO and add on an FSA to save some money on untaxed income (but would have to use that toward my healthcare every year). I just wanted to get some others opinions on this. Plans coverage can be found below. Thanks!
