Filling prescription on last day of insurance

I left my job and the last day of my current health insurance is 7/31 (i.e. Monday). I have a recurring prescription with a specialty pharmacy, and they just told me that I need to see my doctor again before they can refill it because my doctor hasn't seen me in months and wants to check in before approving a refill. I've made an appointment with my doctor for Monday morning, but I'm worried that the refill won't be filled in time by end-of-day Monday.

Can I just tell the specialty pharmacy to only fill it if they can get it done by Monday, but to cancel it if it takes until Tuesday? I don't want to end up having to pay out of pocket for the entire cost, which will be in the thousands, if they fill it after my insurance has ended. What I'm wondering is how much risk there is, and whether it's safer to just not try to get this refill?

For context, I won't have new insurance until mid-August and I'm also moving to another state, so it will take some time to set up a new prescription. Hence I want to get this last refill if I can.
